The serving temperature of wine can dramatically influence its taste and character. When wine is too cold, aromas are muted and flavours subdued; when it’s too warm, alcohol becomes more pronounced, and balance is lost. Finding that “just right” range allows each varietal to express its true personality — whether it’s the bright minerality of a white blend or the supple elegance of a cool-climate red.

Optimal Temperatures for Nyarai Cellars Wines

White & Rosé Wines

Our whites and rosés are crafted to highlight freshness, texture, and purity of fruit.

  • Companion (White Blend): 8–10°C (46–50°F)
    This aromatic blend shines when gently chilled, revealing its citrus, stone fruit, and floral complexity.
  • Chardonnay or Sauvignon Blanc: 9–11°C (48–52°F)
    Cooler temperatures emphasize freshness, while a touch of warmth lets subtle oak and texture emerge.
  • Rosé: 8–10°C (46–50°F)
    Keep it crisp but not icy cold — this brings out the red berry notes and delicate finish.

Winemaker’s Tip: Remove whites and rosés from the fridge about 15–20 minutes before serving. The gradual rise in temperature allows aromas and flavours to unfold beautifully in the glass.

Red Wines

Niagara reds, including those at Nyarai Cellars, are known for their balance and finesse rather than heavy tannins or high alcohol.

  • Cadence (Red Blend): 16–18°C (61–64°F)
    Slightly below room temperature brings harmony to the fruit, spice, and soft tannins.
  • Pinot Noir or Gamay Noir: 14–16°C (57–61°F)
    A gentle chill enhances freshness and highlights their vibrant red fruit and silky texture.

Tip: If your red wines are at room temperature, chill them for about 15 minutes before serving. Cooler tones allow Niagara reds to express their signature elegance and balance.
